Pumpkin Cookies

From Jim Brickman Beautiful World Cookbook – Page 173

I don’t like to pick favorites but these are by far the best pumpkin cookies I’ve ever eaten.  I first one I had was while we were in Niagara Falls, Canada filming the PBS-TV Concert Beautiful World. We were rehearsing day and night, filming segments outside near the Falls and in the Fallsview Casino.  There wasn’t a lot of time to eat. The Green Room had the usual snacks; hummus and pita, soggy cut-up veggies and of course stale granola bars.  In walked our good friend Deb with a basket filled with freshly-baked cookies. It was like she brought “manna from heaven.” Everyone dove in for a taste of her delicious treats. It was a unanimous decision that the pumpkin cookies were the best ever!  We nicknamed them “Beautiful World Pumpkin Cookies.”

I hope you enjoy this delicious Beautiful World Pumpkin Cookie recipe from the Beautiful World cookbook. The book is filled with wonderful All-American and International recipes submitted by my friends across the country and around the world..
