Blueberry French Toast Cobbler
1 loaf French bread 4 eggs
½ C. milk ¼ tsp baking powder
1 tsp. vanilla 4 ½ C fresh or frozen blueberries
½ C. sugar 1 tsp cinnamon
1 tsp. cornstarch 1 T. melted butter
Slice bread diagonally, about ¾” thick. Whisk together eggs milk, baking powder, and vanilla.
Place bread slices on cookie sheet with rim and pour mixture over, turning once to coat completely.
Cover with plastic wrap and let sit 1-2 hrs or overnight.
Preheat oven to 450 degree. Butter 9 x 13 baking dish.
Place blueberries, sugar, cinnamon, and cornstarch in prepared dish, stir to coat.
Arrange bread over berries. (extra bread can be baked separately)
Brush tops of bread with melted butter.
Bake in center of oven for about 20 minutes, until toast is golden and berries are bubbling around the sides.
Remove from oven and sift confectioners’ sugar over top.
Let sit 5 mins before serving. Serves 6
