Christmas Crumb Cake

Batter
3 C. sifted flour                     1 t. vanilla
2 T baking powder          1/2 t. salt
1 1/2 C. sugar                    1/2 C. shortening
2 eggs                                     1 C. milk

Crumb Mixture
1 C. brown sugar             1/4 C. flour
1 T cinnamon                  3/4 C. butter
1 C. Chopped nuts (walnuts are delicious)
Crumble together brown sugar, cinnamon, flour, butter.
Add nuts.
Set aside

Sift flour, baking powder, salt, sugar.
Cut in shortening until mixture is like coarse cornmeal.
Beat eggs, milk, and vanilla together.
Add to dry ingredients until moistened.
Spoon half of batter into greased 9” square pan.
Sprinkle with half crumb mixture.
Add remaining batter and top with rest of crumb mixture.
Bake 375 degrees for 25 minutes.

Cool. Freezes well.
